This Paleo Chicken Stir-Fry is a vibrant medley of tender chicken strips and crisp, colorful veggies, all stir-fried to perfection. It’s a healthy, gluten-free twist on a classic Asian favorite, bursting with flavors and nutrients.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into strips

  • 2 tablespoons coconut oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup broccoli florets

  • 1 cup snap peas

  • 1 carrot, julienned

  • 3 cloves garlic, minced

  • 2 tablespoons coconut aminos (Paleo soy sauce alternative)

  • 1 teaspoon ginger, grated

  • Salt and pepper to taste

  • Optional garnish: chopped fresh cilantro

Directions

  • Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.
  • Add the chicken strips and cook until they are no longer pink in the center, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the remaining 1 tablespoon of coconut oil.
